 Buffalo Chicken Cheese Balls
Ingredients:

  1. 1 store-bought rotisserie chicken
  2. 1/4 cup hot sauce (recommended: Frank's Red Hot)
  3. 1 teaspoon ground black pepper
  4. 1 3/4 cups sharp Cheddar
  5. 1/4 cup freshly sliced scallions
  6. 1 cups all-purpose flour
  7. 3 eggs, lightly beaten
  8. 2 cups panko bread crumbs
  9. Vegetable oil, for frying
Blue Dip Sauce:
  1. 1 1/2 cups mayonnaise
  2. 1/2 cup packed blue cheese, broken up
  3. 1/2 teaspoon hot sauce
  4. 2 teaspoons Worcestershire sauce
  5. 1 teaspoon salt
  6. 1/2 lemon, juiced
  7. 1 teaspoon chopped garlic
Directions:
  1. Have oil heated to 350 degrees F.
  2. Pick the meat from the chicken and discard the skin. Place the chicken in a large bowl and add the hot sauce, pepper, cheese, and scallions, and toss to combine. Roll the chicken into 2-ounce balls, about the size of a golf ball.
  3. Place the flour, eggs, and bread crumbs in 3 separate bowls. Roll each ball in the flour, then the egg and then the bread crumbs. Set aside.
  4. When the oil is hot fry the chicken balls in batches. Cook for about 2 minutes per batch. Remove the chicken to paper towel lined plate to drain the excess oil.
  5. To make the sauce, combine all ingredients in a large bowl and adjust the seasoning if necessary. Serve the chicken alongside the dipping sauce.

Chicken Lasagna
Ingredients:
  • Chicken mince ½ kg
  • Lasagna sheet 1 packet
  • Mozzarella cheese 1 packet (grated)
  • Carrot 1 (medium, finely sliced)
  • Onions 2 (small)
  • Capsicums 2
  • Tomatoes 3
  • Garlic cloves 6 (finely sliced)
  • Milk ½ liter
  • Parsley ½ bunch
  • Tomato paste ½ cup
  • Plain flour ½ cup
  • Oil ¼ cup
  • Oregano 1 tsp
  • Thyme 1 tsp
  • Rose merry 1 tsp
  • Oil 3 tbsp
  • Black pepper powder 1 ½ tsp
  • Salt to taste
  • Cooking Directions:
  1. Finely slice onion, capsicum, tomato, parsley and carrot.
  2. Then heat oil in a pan and sauté finely sliced garlic until it turns golden brown.
  3. Now add chicken mince to it and when mince is cooked, add half of the chopped vegetables.
  4. Also add ½ tsp oregano, ½ tsp thyme, ½ tsp rose merry, salt, 1 tsp black pepper powder and tomato paste.
  5. Mix together until all ingredients are well combined.
  6. Boil lasagna sheet in hot water and keep aside.
  7. Sauté plain flour in ¼ cup hot oil and keep aside.
  8. In another pan, boil milk and thicken it with sautéed plain flour.
  9. Then add remaining vegetables, ½ tsp oregano, ½ tsp thyme, ½ tsp rose merry, ½ tsp black pepper powder and salt then mix.
  10. Layer lasagna sheet in a wide oven proof dish, pour white sauce and add a layer of mince meat.
  11. Repeat the layers so that all the sauce, mince meat and lasagna sheets are layered up.
  12. Then top it with grated mozzarella cheese and bake in a preheated oven at 200 c for 8 to 10 minutes.
  13. When cheese looks golden, tempting Lasagna Cake is ready to serve.
